Susan, I don’t know anything about your medical issues but if you are drinking over a gallon of water and still thirsty, there may be a treatable issue. Drinking so much may be flushing your electrolytes and keeping your body from absorbing and utilizing so much water.

Hi. I drink at least a gallon of water per day. I was always a thirsty person. I told my doctor this and he told me it was great. He said my constant thirst is related in part to Hashimotos. When I was a kid I got laughed at because I was constantly drinking. (I was not dxed with thyroid issues until much later in life). Add a bit of coffee and some soda to that gallon lol! Seltzer and OJ is delicious.
